You must trim and wash radicchio before you cook it. The first parts to remove are outer leaves then you have to cut it into small diced. In a pan, over low heat, heat up olive oil with shallot chopped. Then adding in the pan the radicchio, salt and a little bit of hot water with a lid on for 5 minutes.
Add single cream, mix all with sauce and turn off the heat.
In meantime cook Pappardelle Filotea in a plenty of salted boiling water for 4 minutes, drain the pasta and toss it in the pan with the sauce
Serve adding parmesan cheese and pepper.
