Directions:
Soak the white fava beans in cold water for about 4 hours . After soaking, drain them well and rinse with running water.
In a pan, put an half sliced onion coarsely, the leaves of parsley washed and the soaked fava beans. Cover everything with water and cook over low heat until they simmer, adding boiling water when they tend to dry out too much. When cooked, add salt to taste and blend it all with an immersion blender. Blend it when they are still hot, because when they cool they become very compact and dry. At the time of using them to season the orecchiette, just add a little hot water and heat over low heat.
Cook the Orecchiette Filotea in plenty of salted boiling water, drain the pasta put it in the pan with the hot purèe of fava beans. Season with a little oil, add chilli pepper to taste and mix well. Serve immediately in bowls, preferably earthenware and enjoy!
