Ingredients for 4 people:

  • 250 g di Tagliatelle Le Matassine Filotea
  • 200 g of Smoked Salmon
  • 1 small glass of vodka
  • 1 shallot
  • half a glass of milk
  • 1 tbsp of flour
  • extra virgin olive oil
  • a sprig of fresh chives
Taste le tagliatelle


Chop the shallot and put it in a pan with a little extra virgin olive oil. Make simmer until the shallot becomes transparent. Cut into small pieces the smoked salmon, add it in the pan, stir and let cook for a few moments. Deglaze the sauce with the vodka.

Meanwhile, prepare a roux with the flour and a tablespoon of olive oil. Add milk and roux in the pan, stir and cook for a further minute.

Cook the noodles Filotea in plenty of salted boiling water for 6 minutes. Drain the egg pasta al dente and toss it in the pan with the salmon. Add some of the chives cut into rings and jumps all, adding a little cooking water if the dough tends to dry too.

Serve adding a sprinkled of remaining chives into rings and enjoy!
