>Start by trimming the leek and removing the outer leaves. Then wash and trim the zucchini, scrape and trim the carrots. Finally, cut the vegetables into thin strips, about 6 or 7 cm. long.
Now pour the oil in a wok or skillet, heat and add the chopped vegetables. Toss for a couple of minutes and then add the soy sauce. Cook everything for a maximum of five minutes: the vegetables should remain crisp.
Put the noodles in salted boiling water just long enough to soften them (30 seconds is sufficient) then pour them, (together with just enough cooking water for a soup) into the wok with the vegetables and finish cooking by tossing the pasta with the vegetables for a minute at most.
Serve immediately in porcelain bowls with their relative chopsticks.
